Avant la salle
The market comes before the menu. What the dining room announces depends on what was chosen, received and retained. Provenance matters when it explains what reaches the plate.

The oyster opener works at the edge of the dining room. The guest sees the gesture before receiving the platter. Part of service begins before anyone sits down.
La carte des vins
A wine list shows what a house keeps and what it chooses to serve. An old list lets us look at that decision from a distance: the documents of 1913 and 1943.
Le temps du repas
The same table may want time or be waiting to leave. Service takes its rhythm from what happens between the courses too.
Une coupe
An order can name a drink without specifying the shape of the glass. La salle entend l’usage derrière le contenant.
Ce que le lieu conserve
The neighbourhood changes; a dining room may remain recognisable. That continuity is what the Canon retains.
